Hummus, Lemon, and Olive Oil Dressing

Try this dressing on roasted vegetables, or swap it for the mustard on a veggie burger.

  • Yield: Makes 1/4 cup

  • 1/4 cup hummus
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • Coarse salt and freshly ground black pepper
  • Bitter greens, such as escarole


  1. Whisk together hummus, olive oil, and lemon juice. Season with salt and pepper. Serve on greens.
