Carrot-Mango Smoothie

Shh…don't tell, but hidden inside this delicious smoothie is a ton of healthy vitamins including beta-carotene.

Ingredients

  • 1 mango, chopped (or 1 1/2 cups frozen mango chunks)
  • 1 cup fresh carrot juice
  • Dash freshly grated nutmeg
  • 1/2 cup ice cubes (omit if using frozen mango)

Directions

  1. Step 1

    Puree ingredients in a blender until smooth.

    sorry for the second one, but I wanted to add that ... This smoothie is great with a handful of walnuts. I suppose you could add them to the blender, but on the side is perfect.

    I am having this now as a breakfast drink, but this could easily be a dessert!! I added a banana and used 2 cups of very fresh, organic carrot juice. Otherwise, held true to the recipe. 5 stars and a big ol' DELICIOUS! I will enjoy this the rest of winter and spring and definitely all summer long.

    This was a cool, tasty treat! I think mine was made better after the first cup i made for my sweetheart lol! Nice way to end a monday evening after work. Can't wait to finish the rest in the morning!!! Trying to maintain a healthy body in and out... Thanks Martha!!!:)

    This smoothie is soooo delicious, but to add a little zip, I throw half of a lemon (peel and all) into the juicer with my carrots to make a cup of juice, carrots and lemon combined, then blend that with frozen mango and nutmeg to make the smoothie. That combo is sensational.

    If your looking for a smoothie to hide carrot juice in, this is not it!! The mango does not hide the carrot flavor at all! I left out the nutmeg and enjoyed it as is, however some orange segments would definitely be a yummy addition!

    I like the combination, though I'd be a bit more specific about nutmeg e.g. 1/2 tsp and I also added cinnamon like 1/4 tsp. For the next time will try to add an orange as well. Only for the sake of experimenting.

    Did not like this at all, only drank half of it. I've never liked grapefruit though.
