Roasted Cauliflower

Like its close cousins broccoli and kale, cauilflower boasts plenty of antioxidant, cancer-fighting, and heart-healthy properties. Plus, it's chock-full of folate -- crucial for women of child-bearing age -- and luteins, which encourage eye and artery health and supple skin. Try this basic recipe, then use one of these four flavor combinations to pump up the taste.

Roasted Cauliflower

  • 1 head cauliflower, cut crosswise into 1/2-inch-thick slices
  • 2 teaspoons extra-virgin olive oil
  • Kosher salt and ground pepper


  1. Preheat oven to 450 degrees. Arrange cauliflower slices on a rimmed baking sheet, drizzle with olive oil, and season with salt and pepper. Roast until golden brown on top, about 15 minutes. Flip and continue cooking until tender, about 10 minutes more. Serve immediately.
