Avocado Coconut Toast

  • 4 slices of whole-grain bread
  • 2 teaspoons coconut oil
  • 1 avocado, thinly sliced
  • Salt
  • Red-pepper flakes
  • A squeeze of lemon


  1. Step 1

    Toast bread slices, and spread each with coconut oil. Top with avocado, and season with salt and red-pepper flakes. Finish with a squeeze of lemon.

    I made this yesterday and it was so delicious. I had to substitute a few things based on what I had in my kitchen: pita bread toast instead of multi-grain and olive oil for coconut oil...I loved it! I can't wait to try with the coconut oil!

    This wasn't bad but sorry to say was not great; I felt like it needed a drizzle of honey or something to really bring it together. Maybe a squirt of lime juice?
