  • 2 tablespoons olive oil

  • 1 small onion, minced

  • 1 tablespoon peeled and thinly sliced ginger

  • 1 teaspoon coarse salt

  • Seeds from 3 cardamom pods (optional) or 1/2-inch piece cinnamon stick

  • 2 green apples, peeled and cut into 3/4-inch pieces

  • 1/2 cup coarsely chopped dates (or any other dried fruit)

  • 1/4 cup sugar

  • 2 tablespoons white wine vinegar

  1. Heat oil in a medium saucepan over medium high heat. Add onion, ginger, cardamom and salt, and saute until translucent, about 5 minutes. Stir in apples, dates, sugar and vinegar. Bring to a boil, reduce to a vigorous simmer, and cook, partially covered, until apples are tender, about 10 minutes. Serve warm or room temperature.
