  • Polenta
  • Olive oil
  • Shredded Parmesan
  • Freshly ground pepper


  1. Cut cold polenta into fries; transfer to a baking sheet. Drizzle with oil, turn to coat evenly, and spread in a single layer. Sprinkle with Parmesan and pepper. Broil, 6 inches below heating element, until crisp and golden brown, about 8 minutes.
