Ginger-Candied Tomatoes

  • Grape tomatoes
  • Minced ginger
  • Sugar


  1. Halve tomatoes; toss with ginger and sugar. Place on a baking sheet, cut sides up. Bake in a 225 degree oven until dry but still pliable, 3 to 4 hours. Use to top salads or cooked greens, or eat as a snack.

    I made these and they were so easy and delicious! I used 1/4 tsp of dried ginger and 1/8 c sugar for 1 pint of grape tomatoes and they turned out really tasty.
