- 2 tablespoons miso (preferably shiro or awase)
- 3 tablespoons rice vinegar
- Pinch of pepper
- 1/3 cup safflower oil
Whisk together miso, vinegar, and pepper. Gradually whisk in oil. Use as vinaigrette for salad or marinade for chicken and fish.
