Tropical Fruit Salad

  • 1 pineapple, cut into chunks
  • 1 pound strawberries, sliced
  • Zest from 1 lime, plus 2 tablespoons juice
  • 1/2 cup fresh mint leaves
  • 1/4 cup coconut chips, toasted


  1. In a large bowl combine pineapple, strawberries, lime zest and juice, and mint leaves. Sprinkle with coconut.

    Delicious recipe! My daughter made this fruit salad for a 4h project and the entire family loved it. The lime perfectly contrasted the sweet pineapple and strawberries, and the fruit plate had a wonderful aroma. It was quick, simple, and easy to make, and my daughter learned many new skills in preparing fruit to be eaten. This recipe is one that we plan to eat again very soon!
